I am back with volume 2 of “A Week of Dinners” during quarantine. Paul and I had so fun documenting what we made for dinner last week that we decided to do it again this week. We also got a little more adventurous and picked out a few new recipes to try out. I found Monday’s recipe and then Paul had a backlog of meals he wanted to try so he was in charge of the rest of the week.
Monday: We started the week off with delicious Chicken Piccata. I found the recipe from Pinterest and overrall it was pretty easy and not very time consuming. I did go a little overboard with the capers and shallots so the presentation isn’t pretty, but it was still yummy!
Tuesday: Although chicken wings were Paul’s idea, my mom made this recipe last week and shared it with us. It was a humbling experience where we (mainly Paul) learned he may not be as good as a cook as we once thought. Just kidding, but there were a few bumps along the way including Paul trying to cook the wings directly on the oven rack and placing a pan on the bottom to catch any grease. Our oven and kitchen are already terrible at ventilation, so as you can imagine things got smokey real quick. I was in my own world watching Below Deck so I was late to the disaster situation. He ended up going to plan B and cooking the wings in the air fryer. If you do not have cooling racks as the recipe calls for, just toss them in the air fryer and they will turn out tasty.
Wednesday: Our build your own chicken chipotle inspired bowls turned out so good last week, Paul wanted to do it again but with steak. Once again, we didn’t follow a recipe, so if you are looking for something to follow, check out this one! But honestly this meal is so easy. Cook up some rice, pick your protein of choice, sauté some onions and peppers and whip up guacamole and you’ll have a tasty creation. We even made our own cilantro lime rice, which was very easy!
Thursday: Nothing like cranking up the grill during a snowstorm am I right? Paul picked out grilled chicken breast sliders for Thursday’s dinner and they turned out pretty darn good. We had a ‘Brenda’ salad on the side, which is just a pre-made salad you get from the grocery store. We call it a Brenda salad because my aunt Brenda introduced them to us and they are now a staple… random, I know. I ended up adding the Brenda salad to my sliders and they were delicious!
