I’m excited to share the easiest crockpot chicken taco recipe that will make meal prep during the week a breeze. Paul and I have got in the habit of making these crockpot tacos on Monday nights. It’s an easy way to get back in the workweek routine without having to do a ton of prep work. Follow these simple steps before work in the morning and you’ll have tasty tacos for dinner.
Ingredients: for 2
- 2 frozen chicken breasts
- Taco seasoning packet (we like Hot & Spicy from Old El Paso)
- A couple pinches of cumin
- 1/2 cup of water
- Tortillas
- Taco toppings: avocado, cheddar cheese, red onion, lettuce, and your favorite salsa
Instructions:
- Place the frozen chicken breasts in the bottom of the crockpot. Tip: we use plastic crockpot liners to make cleanup easy at the end of the day!
- Add your favorite taco seasoning and a couple pinches of cumin.
- Add the 1/2 cup of water.
- Turn crockpot to Low for 5-6 hours. I work from home so I check on the chicken throughout the day and will change the setting to Warm if it is cooking too quickly.
- Once you are ready to eat, shred the chicken using a fork.
- Add the chicken and toppings to your favorite tortilla and enjoy!
