I made these healthy chicken burrito bowls with cilantro lime rice for me and Paul and few weeks ago and they immediately became a favorite. I love that there are a good amount of veggies in this meal but you don’t feel like you’re overloaded with greens. You can also mix and match with what ingredients you already have in your kitchen. I don’t love how the pictures turned out, but in my defense I was starving and ready to eat.
Ingredients
- White or brown rice
- Cilantro
- 1-2 limes
- 2 garlic cloves
- olive oil
- Pepper
- Garlic salt
- 2 skinless chicken breasts
- 2 tablespoons of taco seasoning
- 3 tablespoons white flour
- 1 large bell peppers, cut into strips
- 1 red onion
- 1 avocado
- Romaine lettuce
- Salsa (any of your favorites)
I like to follow this recipe from Simply Recipes for the cilantro lime rice. We have used it in a few different meals and it turns out really well.
Instructions:
- Cut the chicken breasts into thin slices (I like to aim for bite-sized pieces). Sprinkle with pepper and some garlic salt
- Combine the taco seasoning and white flour in a separate bowl. Dip each piece of chicken in the mixture until thoroughly coated.
- In a medium pan, heat 1-2 tablespoons of olive oil on high heat. Add the chicken and cook on each side until the chicken is thoroughly cooked through. Set aside.
- Add the peppers to the same heated skillet along with pepper and garlic salt. Cook until soft.
- Once the rice is cooked (see recipe here), assemble the taco bowls with rice, chicken, chopped. lettuce, avocado, red onion (diced), peppers, and top with salsa!
