Quick and healthy dinner bowls are a go-do weeknight meal in my household. I found inspiration for this ground turkey teriyaki rice bowl on Pinterest and was excited to try it out. I love how you can spice up a bowl by changing up the veggies, protein and/or base. Also, we seem to only cook with ground turkey when I whip up a big batch of chili, so it was a pleasant change up in protein.
Ingredients
- Lean ground turkey
- 1-2 tablespoon of vegetable oil
- 1 cup diced white onion
- 2 tablespoons minced garlic
- 2 broccoli crowns – chopped
- 1 large carrot peeled and grated
- 1 green onions
- White rice (we do 1 cup for 2 servings, which is usually way more than enough)
- Teriyaki sauce
- Sriracha (optional)
- Olive oil
- Garlic salt
- Pepper
Instructions
- Pre-heat oven to 400
- Season broccoli with olive oil, garlic salt and pepper
- Cook for 10-12 minutes
- Meanwhile, heat vegetable oil in a large skillet over medium-high heat and add onions. Cook until soft
- Add in the ground turkey and garlic and cook until turkey is about half cooked. Add grated carrots and continue to cook until turkey is cook thoroughly.
- Add Sriracha (optional) and teriyaki sauce to the cooked turkey and vegetable mixture and stir. Simmer for 3-5 minutes.
- Prepare bowls with rice and spoon in the turkey mixture and top with cooked broccoli. Garnish with green onions
