Welcome back to another yummy weeknight dinner recipe here on Miss Olivia Says. Looking back at recipes I have posted, we definitely love Mexican food in our household. In no way is it authentic, but we seem to eat a Mexican-inspired dish at least once a week. In today’s post, I am sharing an easy beef flautas recipe. Overall, this dish is super yummy, but the only downside is the lack of veggies. I have been trying to incorporate lots of veggies into my diet, so this recipe is definitely an exception. Also, I don’t like sour cream very much so I did not top my flautas with the crema. You can switch out sour cream with greek yogurt, but we didn’t have any on hand. Instead, I opted for my favorite mango habanero salsa.
Please note: I am completely aware that the presentation and quality of pictures I took of these flautas are 0/10. Hence why I am only posting one picture and I will not be promoting on Pinterest 🙂 I almost debated not even posting this recipe because of my photography execution, but they were actually really good so I decided it can live on my blog.
Ingredients:
- Olive oil
- Salt and pepper
- 1 yellow onion
- Ground Beef (10-12 oz)
- 1 packet of taco seasoning
- 6 flour tortilla
- 1/2 cup cheese (cheddar or Mexican blend)
- 1 lime
- 4 tbsp of sour cream
- Pickled red onions
- Your favorite salsa
Instructions:
- Preheat the oven to 425 degrees
- Coat a baking sheet with nonstick spray
- Halve, peel and thinly slice the onion. Mince a few slices until you have 1 TBSP
- In a large pan, heat olive oil over medium-high heat
- Add the sliced onion and cook for about 2-3 minutes
- Add in the ground beef and taco seasoning
- Cook until the beef is browned
- Stir in 1/3 cup of water and simmer until the mixture has thickened
- Drizzle the tortillas with olive oil and completely coat
- Add beef filling (about 1/4 a cup) to one side of the tortilla and sprinkle with cheese
- Roll up the tortillas to create the flautas
- Place seam side down on the prepared baking sheet
- Bake on the middle rack until golden brown (8-12 minutes)
- While the flautas bake, zest and quarter the lime
- In a small bowl, combine sour cream and lime zest.
- Add 1 tsp of water and a few squeeze of lime juice
- Stir and season with salt and pepper
- Divide the flautas between plates and top with lime crema, salsa, and pickled onions.
