I did a quick search on my blog to see if I have posted my shredded chicken recipe yet and I couldn’t believe that I have gone this long without doing a dedicated post. I explained how I shred chicken in a taco recipe, but I incorporate shredded chicken almost every week so I figured it deserved its own post.
Thanks to my mom who shared these instructions last year, this shredded chicken recipe is a game changer and I guarantee it will make your weeknight dinner meal prep 10x easier. The only ingredients you need are chicken, 1/2 cup of water, and a packet of taco seasoning.
Ingredients: For 2
- 2-3 frozen chicken breasts (depending on size and if you want leftover chicken for tomorrow’s lunch)
- 1 taco seasoning packet (we like Hot & Spicy from Old El Paso)
- A couple pinches of cumin
- 1/2 cup of water
Instructions:
- Place the frozen chicken breasts in the bottom of the crockpot. Tip: we use plastic crockpot liners to make cleanup easy at the end of the day!
- Add your favorite taco seasoning and a couple pinches of cumin.
- Add the 1/2 cup of water.
- Turn crockpot to Low for 5-6 hours. I work from home so I check on the chicken throughout the day and will change the setting to Warm if it is cooking too quickly.
- Once you are ready to eat, shred the chicken using a fork.
- Add it to any recipe that calls for shredded chicken and enjoy!
