Lettuce wraps are super easy and relatively healthy based. on what you use for ingredients. Paul and I whipped up some turkey lettuce wraps this week and because they were so yummy, I knew I had to share with the blog. I will say that lettuce wraps typically aren’t the most filling type of food. I’ve mentioned this previously, but after a big workout I am usually starving by dinner time. I have found that adding more protein and veggies to recipes make it more filling and healthier. Feel free to adjust the recipe based on your preferences and when it comes to portion sizes, but I added a side of broccoli. You can easily substitute the broccoli with your favorite veggie or simply enjoy the lettuce wraps as is.
Ingredients:
- Ground turkey
- Broccoli crowns
- 1-2 bell peppers
- 1 onion (yellow or white)
- Baby romain lettuce
- 1 lime
- 1/4 cup of peanuts
- 4 tablespoons of soy sauce
- 2 tablespoons of sweet chili sauce
- Salt
- Pepper
- Olive oil
- 1 tsp of sugar
- Everything but the Bagel Seasoning
Instructions:
- Preheat the oven to 400
- Cut the broccoli and then dice the bell pepper and onion
- Cut the root end of the lettuce
- Cut the lime into quarters
- Once the oven is preheated, line a baking sheet with aluminum foil. Add the broccoli and coat with olive oil, salt and pepper.
- Bake for 10-12 minutes
- Meanwhile, heat a pan over medium-high and add the peanuts, 1 tsp of sugar and 2 tbsp of water. Cook and stir until the water has evaporated. Once the peanuts are candied, remove from heat and transfer to a small bowl
- Add olive oil to the pan and heat over medium-high. Add the bell pepper and onion. Season with salt and pepper and cook until lightly browned. Transfer to a plate
- Add olive oil to the same pan over medium-high heat. Add the turkey and season with salt and pepper
- Break up the meat and cook until browned and cooked through
- Stir in the veggies, soy sauce and chili sauce. Cook for 2-3 more minutes
- Divide the lettuce and fill with the turkey mixture. Top with candied peanuts & Everything But the Bagel Seasoning
- Squeeze lime juice on top and enjoy with a side of broccoli
