Last year I posted a chicken gyro recipe that was inspired from Eating Well. While that recipe turned out amazing, we have since refined our gyro recipe to be even easier. In today’s post, I am sharing my easiest and yummiest chicken gyro recipe that will become a staple in your household.
Ingredients:
Serves 2:
- 2 Chicken breasts
- Naan bread – We use the Stonefire brand
- Mixed greens
- Lighthouse Tzatziki Ranch Greek yogurt dressing – or any other tzatziki sauce
- Cucumber
- Red onion
- Lemon juice
- Seasonings: garlic salt, pepper, paprika, pepper
- Sriracha (optional)
Instructions:
- Marinate bite sized chicken breast bites in lemon juice, Sriracha (optional), olive oil, garlic salt, paprika, pepper. I don’t use exact measurements for the seasonings, but 1/2 tsp is a good estimate
- Heat olive oil in a pan over medium-heat. Add the chicken and cook until cooked through
- Turn the oven to broil (high) and place the naan bread in for a few minutes flipping mid way through. Keep an eye on it to make sure it doesn’t burn
- Dice cucumber and thinly slice the red onion
- Apply the Tzatziki sauce to one half of the inside of the naan bread. Add Sriracha to the other half if you like spicy. Add the chicken, cucumber, mixed greens and red onion. Squish together and enjoy!
