I scroll Pinterest regularly looking for recipe inspiration and I gotta say, I pride myself on posting recipes that are straight to the point. It is a pet peeve of mine when you find a recipe you want to re-create and you have to scroll for 5 minutes reading through a novel about the origins of chicken casserole. With that said, in today’s post, I am sharing a super simple and healthy buffalo chicken salad with spicy ranch recipe. This one was a favorite and we will definitely be making it again.
Ingredients: for 2
- 2 boneless skinless chicken breasts
- 1 cup of Frank’s Buffalo Hot Sauce – split in half
- 1/2 cup of ranch dressing (we used Hidden Valley – Light)
- 1 tablespoon honey
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon garlic salt
- Black pepper
- Chopped romaine lettuce
- 1 red onion thinly sliced
- 1 avocado
- 1 red bell pepper, diced
- 2 green onions thinly sliced
- Crumbled blue cheese (optional)
Instructions:
- In a bowl, add the chicken breasts, 1/2 cup of Frank’s, 1 tablespoon of honey, 1/2 teaspoon smoked paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of garlic salt, and black pepper. Ensure the chicken is thoroughly coated and place in the refrigerator for 30 minutes.
- Preheat an air-fryer (you can also grill) to 400 degrees.
- In a separate bowl, add 1/2 cup of Franks and 1/2 cup of ranch dressing – stir and set aside.
- Cook the chicken in the air-fryer for 15-18 minutes depending on the size of the chicken. Once cooked thoroughly, let rest on a cutting board.
- When the chicken is cooled, slice into thin strips.
- Assemble salad bowls with romaine, blue cheese, onion slices, avocado slices, red bell pepper, green onions, and top with chicken. Drizzle the spicy ranch on top and enjoy!
