Happy Sunday Miss Olivia Says readers! I am back with another meal prep recipe for Cucumber Greek salad. I absolutely loved the quinoa salad I made last week so I decided to stick with the theme of refreshing salads and meal prep a Cucumber Greek salad. A huge snow storm rolled into Denver last night so I brought out my snow boots and walked to the grocery store this morning to pick up the ingredients. I definitely enjoy the snow a lot more when I don’t have to drive in it. Anyway, check out my Cucumber Greek salad meal prep recipe below:
Cucumber Greek Salad Recipe:
Ingredients:
2 cucumbers, chopped into ¼ slices
1 can of Garbonzo beans
1 a red onion, sliced
¼ cup olive oil
2 Tablespoons lemon juice
2 Roma tomatoes (sliced) – optional. I personally don’t like tomatoes so I substituted them for Garbanzo beans
Feta cheese
Salt and Pepper
Black olives, pitted and sliced
Instructions:
- Slice cucumbers, red onion and olives and toss into a big mixing bowl. In a separate bowl, mix lemon juice, olive oil, and any other seasonings (I used garlic salt and crushed red pepper). Pour the lemon juice/olive oil sauce into your mixing bowl containing the sliced veggies. Toss the salad and add your desired amount of feta cheese. Season with salt and pepper for taste.
This Cucumber Greek salad recipe is literally so easy and quick. I made enough to last me 3 lunches this week, but you can definitely adjust the recipe if you want to make more. It makes a great side or main dish and perfect for anyone looking for healthy meal prep ideas! Now it is your turn!
