I am back at it again with volume 3 of ‘A week of Dinners’. If you want to catch up on what we cooked for dinner the past two weeks check out those posts here and here.
Sunday: Since quarantine we have made build your own pizzas a couple times now. Not only are they super simple, but they are fun to make as well. I made mine with red sauce, mozzarella cheese, spicy Italian sausage, pepperoni, red onion and some seasoning. And of course we paired our pizzas with a tasty Brenda salad.
Monday: Salmon and asparagus is a staple meal in our household. It is super easy to make and pretty healthy as well. I baked the salmon at 450 degrees and then added the asparagus the last 10-12 minutes. Add fresh squeezed lemon juice and you have a delectable dinner!
Tuesday: Saying Paul was excited for Tuesday’s dinner is an understatement. I think he was texting like 6 of his friends throughout the day letting them know what was on the menu for dinner. He loosely followed this imitation Taco Bell Crunchwrap Supreme recipe and it turned out really good. He mainly needed a recipe to figure out the best way to fold the tortillas, but then improvised by using a taco seasoning packet and not including the tomato or sour cream. Overall, it is definitely not the healthiest option compared to Monday’s dinner, but moderation is good. I had a Zoom catch-up call with my friend that lasted 3+ hours so I forgot to take pictures when Paul delivered me my Crunchwrap. Thank goodness for him because he snapped a few pictures along the way.
Wednesday: Paul and I had made a tee time after work a couple days in advance so we were able to plan a curbside pickup from the clubhouse into our weekly menu. The golf club we belong to does have a food minimum you have to hit every month and if you don’t meet it, you get charged regardless. The club is also offering 30% off food pickup, which is nice but at the same time it makes it more difficult to hit the minimum. Oh well. There were fancy entree options on the menu, but I decided to go with the potstickers appetizer and a small Cesar salad. Paul got green chili and a Cesar salad as well. The potstickers were delicious as usual, and the salad was meh.
Thursday: We had another tee time after work and when we showed up to the course, it was so windy so we decided not to play. When we got home, we made this sausage, potato and veggie recipe. We had a sausage Paul bought a little while back that we needed to use up, so he found this recipe and it turned out quite tasty. It did take awhile from prep to cooking time, but it was worth it.
