I am back at it again with another Week of Dinners because clearly I can’t think of any other content to post. Hopefully I get some good ideas soon, but in the meantime here is some more food.
Monday: Paul and I finally decided to whip out the cookbooks we got from our wedding and picked out an enchilada recipe from Joanna Gaines book, Magnolia Table. We paired the enchiladas with some Mexican rice and it was a hearty meal. I think I was still full from dinner the next morning. If you are interested in the recipe, I highly recommend ordering her cookbook otherwise, I am sure there are similar recipes online!
Tuesday: We continued with the theme of cookbooks, but this time we found a General Tso’s Chicken recipe from our Instapot Miracle Cookbook. The meal turned out really good, however I feel like it was more complicated than it needed to be. I make a chicken, rice and broccoli bowl that is 10x easier. But hey, why not spend longer cooking dinner during the Q.
Wednesday: No pics for today, we had a 5:20pm tee time so we ordered curbside pickup at the clubhouse and ate on the grass before we teed off. I had the same yummy potstickers from last week and Paul got a pizza. We also got a Cesar salad, but they forgot to give us plastic utensils so it went to waste:(
Thursday: We wrapped up the week with Chipotle inspired chicken bowls, which we made a couple weeks back. Honestly, this is one of my favorite meals because they are so good and very easy to make. Add your favorite hot sauce and/or salsa and you’ll be hooked!
