You know what time it is! Time for another ‘Week of Dinners’ volume 5. I am a little late on this one, but better late than never. Work has been busy so last week was hectic, but filled with good food.
Monday: We started off the week once again with salmon and asparagus. I’ve said it before and I will say it again, this meal is so tasty and easy to make. Season how you wish, add parmesan to the salmon, and finish off with fresh squeezed lemon juice on the asparagus {Chef’s kiss}
Tuesday: We celebrate Cinco de Mayo in fashion with some chicken tacos. We made them very similar to our chipotle inspired chicken bowls (see more here), but had tortillas rather than bowls. Paul and I both agreed we like the bowls a lot better, but these were easy and overall a tasty dinner.
Wednesday: We were supposed to make a cajun red beans and rice recipe (Paul’s idea) from our Instapot recipe book on Wednesday, but we didn’t plan it out very well. The recipe calls to soak the beans overnight, which we did not do on Tuesday and then we also had a golf tee time at 4:45pm Wednesday. The recipe is a bit extensive so even if we did soak the beans, we wouldn’t have had dinner until 8pm (wayyy to late for me). Instead we decided to push this recipe to a different day and got Chick-fil-a on the way home. Side note, we were supposed to cook this meal last night and once again forgot to soak the beans overnight so we’ll see if we can follow through tonight.
Thursday: We finished off our ‘week of meals’ with a chicken spaghetti recipe from Joanna Gaines’ cookbook, Magnolia Table. This recipe is hearty, let me tell ya. There is every kind of cheese you can think of plus milk and heavy whipping cream. We also should have at least cut the recipe in half because we had enough food for a small village. It turned out delicious, but I was definitely full until like Friday evening.
