Another day, another recipe post! Chicken bowls are a staple in our household because not only are they yummy, but they are relatively cheap to make and healthy. It is also very easy to get the portions right when you are cooking with chicken, rice and veggies. I have been experimenting with different recipes and was quite pleased with this chicken-basil bowl I made last week. It turned out great and next time I will likely add in some broccoli for extra nutrients.
Ingredients: Cooking for 2
- 1 cup of rice (brown or white depending on your preference)
- 2 tablespoons of olive oil
- 3 tablespoons of soy sauce
- 1 cup of fresh basil leaves or dried basil (our supermarket did not have fresh leaves)
- Garlic salt
- Black pepper
- Green onion
- Everything But The Bagel Seasoning from Trader Joes (or sesame seeds)
Instructions:
- Cook rice according to instructions
- Cut chicken breast in bite sized pieces. Place in a bowl and season with garlic salt and pepper
- In a large skillet, heat olive oil over medium heat
- Add chicken and cook until browned
- Add soy sauce and cook for another 2-3 minutes
- Add fresh basil leaves or dried basil and stir occasionally for another 2-3 minutes
- Add rice and chicken to bowls and top with Everything But The Bagel Seasoning and chopped green onion
- Optional: cover chicken with sriracha 🙂
