I can’t believe it has been nearly a month since my last post! I don’t know where the month of June went but here we are in July with another blog post about food… I promise I will post about something else one day.
Paul and I made a Buffalo Chicken Enchilada recipe on Tuesday and afterwards we thought it would be the perfect meal for the 4th of July to share with family, friends or just your household depending on social distancing guidelines 😉 It isn’t the healthiest, but great for a holiday weekend where some unhealthy food is more than okay.
We followed this recipe from Food Network, but it can easily be adjusted to fit your preferences. For example, if you don’t want to go crazy with the cream cheese, not including it in the chicken mixture would suffice and it would still taste great. We also didn’t include blue cheese crumbles because a small container at the store was $7 and since we don’t use blue cheese often, we decided to go without. Instead we just drizzled blue cheese dressing on top, which we will use for wings and other recipes in the near future.
