Hi blog! I am back from a couple month hiatus as usual. I was in such a good blogging routine throughout March-July and then life and work got busy.. So here we are in November. I posted a few partner articles during my blog break, but today I am back with another yummy recipe. I actually made this chicken hummus bowl a few months back and since then we’ve had it multiple times because it was so good.
This recipe reminds me of a mediterranean dish with so many flavors accompanied by some spicy hummus. You can get as creative as you’d like by combining different veggies based on your preference. Paul and I hate tomatoes so we opted for cucumbers, red onion, and bell peppers. Another time we made this dish we added some mixed greens.
Ingredients
- Chicken breast
- Hummus – we picked out Sabra Supremely Spicy
- Feta Cheese
- Veggies: red onion, tomato, cucumber, bell peppers, mixed greens, etc!
- Olive oil
- Lemon juice
- Spices: we cooked our chicken with olive oil, garlic salt, pepper, and crush red pepper
- Optional: sriracha for the finished product
- Optional: Naan/Pita bread
Instructions
- Cut chicken in bite sized pieces
- Marinate with olive oil and spices
- Heat pan with olive oil and cook chicken thoroughly
- Cut veggies
- Heat Naan/Pita bread in oven: you can broil on high for 2-3 minutes
- Divide hummus into bowls (we did about 1/2 cup per bowl)
- Add to bowls cooked chicken, veggies, feta cheese
- Add a light dressing of lemon juice
- Coat in Siracha if you so choose:)
And that’s it! Such a simple and healthy dinner meal. And you can make it extra filling by pairing Pita bread to scoop up remaining hummus.
