Buffalo chicken wraps are becoming a weekday dinner staple in our household. I think we first made them during the height of quarantine back in Spring 2020. Since then we have made them for quick weeknight dinners quite a few times so I thought it would be a yummy recipe to share.
The most time consuming part of this recipe is grilling the chicken. You could also prepare the chicken on the stove as well, but Paul likes to whip out his propane grill on the patio during the dead of the winter. I also had to convince him that no, we aren’t going to use his Traeger for something as simple as grilled chicken to put inside of a wrap.
Ingredients
- Chicken Breast (we get 2 normal sized chicken breast from the meat counter)
- Buffalo sauce: We have used Franks and the Kroger brand medium wing sauce in the past. Franks will be a little more runny, while Kroger or any other wing sauce will be thicker. Honestly, it is up to you so pick your favorite BBQ, buffalo, wing, or hot sauce
- Banana peppers
- Lettuce: you can use a coleslaw mix or spring lettuce mix
- Avocado
- Red Onion
- Tortillas: There are a million different types of tortillas out there. We had the Mission Spinach & Herb wraps on hand when we made this recipe most recently, but have tried the Mission Sun Dried Tomato & Basil flavor as well!
- Optional: Ranch
Instructions
- Season chicken how you wish: We typically season with garlic salt, pepper and maybe a chili powder. But we change it up each time and honestly, you don’t taste much of the chicken flavor when it is coated in sauce.
- Cook the chicken on a grill or stove and cut into bite sized pieces once cooked thoroughly.
- In a bowl, add diced red onion, banana peppers, lettuce, diced avocado, and cooked chicken.
- Add your choice of buffalo wing sauce or Franks until the ingredients are coated evenly.
- Lay out your tortilla and add scoops of your chicken and veggie mixture to the middle. Before you wrap up the tortilla, an optional step is adding ranch to the top of your ingredients.
- I honestly have no clue how to properly wrap the tortilla so the insides don’t fly out (that is Paul’s job). So I am linking this YouTube video featuring how to roll a Chipotle burrito, which is basically the same thing you will want to do.
