I am surprised I have not shared my one-pan recipe on my blog yet. Paul and I have been making this for years and we got the idea from my sister while she was in grad school. This is the perfect work week easy dinner idea and you can also make extra for lunches. It is cheap, healthy and filling so you won’t be looking for an extra snack before bed. For some reason we tend to make this on Monday or Wednesday nights so when I think of one pan, I think of coming home from Orange Theory hungry and ready to eat my weight in sausage, peppers, onions, broccoli and potatoes.
Ingredients: Serves 2. Adjust proportions for leftovers
- 3-4 red potatoes chopped. We use a veggie cutter and it saves time and our fingers
- 1 red onion chopped
- Sausage link – we typically buy the Kroger brand and if they have spicy options, even better
- 2 crowns of broccoli
- 1 red bell pepper
- Garlic salt
- Olive oil
- Pepper
- Crushed red pepper
- Optional: Siracha or wing sauce
Instructions:
- Preheat oven to 400
- Cut potatoes and onion using a good ol’ fashioned knife, or a veggie cutter like this one.
- Slice sausage link in .5 inch sections
- Cut broccoli
- Slice red bell pepper into thin strips
- Add all your veggies and sausage to a baking sheet lined with foil or parchment paper
- Season with olive oil, garlic salt, pepper, and crushed red pepper
- Cook for 40 minutes in total. At the 20 minute mark, rotate ingredients so everything is cooked evenly
- Serve & enjoy! Paul and I like to add some Siracha or wing sauce to our plates, but if sauce isn’t you thing, it already has plenty of flavor
