Paul and I attended a cooking class with some friends almost 5 years ago and learned how to make a delicious homemade tomato and red pepper soup. Over the years, we added our own twist on it (hello jalapeños) and started pairing it with “adult” grilled cheese sandwiches (aka grilled cheese sandwiches with fancier cheese than the standard Kraft American slices). It is currently -2 degrees in Colorado so this morning when we went grocery shopping, we decided today is the perfect day to whip up some soup and of course share it on the blog.
Soup Ingredients: we make enough to easily serve 4-5 people
- 8 pounds of roma tomatoes
- 2 red bell peppers
- 10 cloves of garlic: feel free to adjust based off your garlic preferences
- Optional: 2 jalapeños – we like spice, but if that isn’t your thing, feel free to leave out
- 4 cups of chicken broth
- Olive oil – Paul recommends vegetable oil to prevent excess smoke in your oven
- Garlic salt
- Pepper
Grilled Cheese Sandwich Ingredients:
- Sourdough
- Fancy cheese: we used Laughing Cow Creamy Spicy Pepperjack
- Butter
- Bacon
Soup Instructions:
- Preheat oven to 400
- Line 3-4 baking sheets with parchment paper
- Half the roma tomatoes and place on baking sheet
- Core and seed the red bell peppers, seed jalapeños, remove skin from 10 garlic cloves and and place on the baking sheet(s)
- Season with olive oil, garlic salt, and pepper
- Place baking sheets in the oven and set a timer for 25 minutes
- At 25 minutes, rearrange sheets in order to roast the veggies evenly
- After 50 minutes, remove the sheets from the oven and place tomatoes, peppers, jalapeños, and garlic in a large pot. Cover with 4 cups of chicken broth
- Bring to a boil and then allow to simmer for 1-hour
- After an hour of simmering, use an immersion blender to blend evenly
- Once throughly blended, strain into a bowl, which will remove excess pulp and seeds
- Place the strained soup back on the stove on low until ready to eat. At this point, we like to do a little taste test and add more seasoning if needed (salt, pepper, red pepper flakes)
Adult Grilled Cheese Instructions:
- Spread cheese on one side of the sourdough bread
- Add bacon bits and place the other piece of bread on top
- Heat pan to medium and add 1 tablespoon of butter
- Cook thoroughly on both sides until browned
- Enjoy!
