I’m back with another recipe because that’s 95% of my content these days. I got the new copy of the Eating Well magazine and came across a jerk-spice salmon bowl recipe I wanted to try out. Eating Well provides me so much good inspiration and I enjoy modifying and adding a twist to the recipes.
I love cooking salmon during the week and typically season with salt, pepper, lemon and Parmesan so this recipe got me out of my comfort zone and I used jerk spice for the first time.

Recipe Inspiration: Eating Well
Ingredients: Cooking for 2
- 2 salmon fillets
- Olive oil
- 2 tablespoons jerk seasoning
- 1 teaspoon paprika
- 4 teaspoons lime juice
- 1 pound Brussels sprouts, trimmed and halved
- ¾ teaspoon kosher salt
- 1 teaspoon of garlic salt
- ¼ teaspoon ground pepper
- 1 cup brown rice
- ¼ cup mango juice or nectar
Instructions:
- Place salmon on a cutting board, skin-side up, and cut into 6 portions. Using a sharp knife, make three ⅛-inch-deep cuts through the skin of each portion. Whisk 1 tablespoon oil, 2 tablespoons jerk seasoning, paprika and 1 teaspoon lime juice in a medium bowl. Rub the mixture on both sides of the salmon. Cover and refrigerate for about 20 minutes.
- Cook brown rice according to package (2 cups of water, 1 cup of rice)
- Position racks in upper and lower thirds of oven; preheat to 425°F.
- Toss Brussels sprouts, 1 tablespoon oil, 1 teaspoon garlic salt salt and 1 teaspoon pepper on a rimmed baking sheet. Roast the Brussel sprouts until lightly browned, stirring and rotating the pans between the racks halfway through, about 20 minutes.
- About half way into the 20-minute timer, add salmon skin-side down on a separate baking sheet and bake (roughly 10 minutes).
- When the Brussel sprouts are out of the oven, turn broiler to high and broil the salmon for an additional 2-3 minutes
- Whisk mango juice (or nectar), 4 tablespoons oil, 3 teaspoons lime juice, ¼ teaspoon salt and ⅛ teaspoon pepper in a small bowl. Serve the brown rice, Brussel sprouts and salmon topped with the dressing.
