This recipe is so easy and delicious, it will likely become a staple in your home. I’ve been making this crockpot soup for years and I am pretty sure I don’t have a blog post about it yet so here we go.
I’ll summarize the instructions in one sentence. Throw all the ingredients in the crockpot and cook on low for 5-6 hours. No seriously, that’s all you do besides of course prepping the veggies and opening the cans of corn and black beans… Just don’t accidentally open the salsa jar all over your kitchen rug like I did.
Ingredients
- 2-3 chicken breasts boneless skinless
- 1 16 oz. jar Salsa, mild or medium
- 1 packet of taco seasoning
- 1 medium onion chopped
- 1 can tomato with green chilies
- 1 can black beans rinsed
- 1 can corn drained
- 4 cups chicken broth
- 2 cloves garlic minced
- Green Onions
- Tortilla Strips for garnish
- Avocado for garnish – optional
- Cheddar cheese – optional
Instructions
- Add all the ingredients except green onions, tortilla strips, cheese, and avocado to the crock pot. Mix thoroughly.
- Cook on low for 5-6 hours. Use a fork to shred the chicken.
- Serve with green onions, tortilla strips and avocado. You can also top with cheddar cheese!
