Another dinner recipe that is bowl-form? Who woulda thought! In today’s post, we are getting creative with an easy citrus chicken rice bowl. This recipe is quick and a great one to meal prep for lunches during the week.
Ingredients:
- 1 orange
- 1 lemon
- 1 onion (yellow or white)
- Mixed greens
- Sugar
- 1 poblano pepper
- Chicken breast
- 1 TBSP southwest spice blend – mix up cumin, paprika, chili powder and cayenne pepper
- Rice (jasmine or white rice)
Instructions:
- Prep the fruit and veggies: Cut the orange, zest the quarter the lemon, thinly slice the onion, Halve, core and slice the poblano pepper.
- Prep the chicken by cutting into thin slices. Marinate with the juice from the orange, lemon, and 1/2 TBSP of your southwest spice blend
- Cook the rice per the instructions provided. Feel free to add a pinch of salt and some of your southwest spice blend
- In a microwave-safe bowl, combine 1/4 of your onion, juice from two lemon wedges, 1/4 tsp of sugar, and a pinch of salt. Microwave until the onion is softened (about 1 minute).
- Veggies: heat olive olive in a pan over medium heat. Add in the poblano pepper and season with salt and pepper
- Cook for 3-4 minutes and then add remaining onion, salt and pepper. Cook for another 4-6 minutes and set aside
- Chicken: add olive oil to the same pan and cook the chicken in a single layer. Cook until chicken is cooked through
- Add in the cooked veggies and stir. Remove from heat
- Assemble your bowls: add rice, mixed greens, chicken, veggies, pickled onion, your favorite salsa. Serve with the remaining lemon wedge.
