If you frequent the recipe section of my blog you already know that I love making different types of protein bowls for dinner. Not only are they filling and healthy, but it is a good dinner idea if you want to keep your grocery bills on the lower side. In today’s post, I am sharing a simple and tasty Mediterranean inspired turkey with rice and pita recipe:
Ingredients:
- Turmeric
- Jasmine rice / white rice
- Green onions
- 1 lemon
- 4 TBSP sour cream
- 2 TBSP mayo
- 1. tsp garlic powder
- Ground turkey
- 1 TBSP Shawarma Spice Blend
- Pita or. Naan bread
- Hot sauce
- Olive oil
- Salt
- Pepper
- 1 TBSP butter
Instructions:
- In a small pot, melt 1 TBSP of butter and add 1/4 tsp of turmeric
- Stir in rice and water (per the rice instructions). Add a pinch of salt and bring to a boil.
- Once boiling, reduce heat and simmer for 15 minutes
- Quarter the lemon and thinly slice the green onions
- Sauce: in a small bowl, stir sour cream, mayo, garlic powder, lemon juice and water until the sauce becomes a drizzling consistency. Add a pinch of salt and pepper
- Turkey: heat olive oil in a pan over medium-high heat
- Add green onion whites, and cook for 1 minute
- Add in the turkey, Shawarma spice, salt, and pepper
- Cook until browned
- Stir in 1/4 cup of water and reduce the heat to a simmer – cook until slightly thickened
- Rice: Stir in half of the green onions, salt and pepper
- Broil pita/nann or toast until slightly browned
- Divide the rice, turkey, and pita between bowls. Top with sauce, scallions, and hot sauce.
- Enjoy!
