Paul has been on a ramen kick lately. Whenever he works from home he whips up a hot bowl of ramen for lunch with those 25 cent noodles you probably had in college. This past weekend we decided to save some money and eat at home rather than going out to dinner. We were planning on making fancy ramen (aka ramen with protein) on Sunday night, but we ended up making it Saturday as well. We switched up the protein and made chicken one night and steak the next. Both times we tried to soft boil eggs using this recipe, but failed miserably. If anyone has tips on how to successful soft boil an egg, please let me know!
What is fun about making ramen is you can get creative and switch things up based on what you have in your kitchen. We like spicy so if that isn’t your thing, swap the Siracha with a tamer sauce.
Ingredients: For two –
- 2 packets of ramen noodles – we used Maruchan
- 2 eggs (soft boiled, hard boiled, or any way you prefer!)
- Chicken or steak
- Garlic
- Olive oil
- Salt and pepper
- Green onions
- Sriracha
- Huy Fong Chili Garlic Sauce
- Panda Express Kung Pao Sauce
- Everything But the Bagel seasoning
Instructions:
- Cut you choice of protein into bite sized strips. Seasoning with salt, pepper, and garlic
- Heat olive oil in over medium heat. Add the protein along with 1 tablespoon of Huy Fong Chili Garlic Sauce. Cook through.
- Meanwhile, bring a pot of water to a boil (per the ramen package instructions). Add the noodles
- Add the ramen seasoning packets, Sriracha, Panda Express Kung Pao Sauce, and Huy Fong Chili Garlic Sauce to create the broth. We didn’t do exact measurements so we recommend you add what you are comfortable with, spice-wise.
- Cook the eggs based on your liking (over easy, soft boiled, hard boiled, etc).
- Assemble the cooked protein in a bowl. Add ramen, broth, and an egg on the side. Top with green onions and Everything But the Bagel seasoning.
- Optional: Drizzle with Sriracha
- Enjoy!
