We celebrated Easter with my parents and sister followed by a large lunch consisting of tri-tip, baked potatoes, salad, Texas Toast, and a hefty helping of cheese from the charcuterie board. Knowing we would have a lot of food mid-day, Paul and I planned chicken lettuce wraps for a light Sunday dinner. This recipe is super quick and perfect for a healthy dinner or meal prep for weekday lunches.

Ingredients: For 2
- Romaine lettuce
- 1-2 tablespoons of olive oil
- 1/2 pound ground chicken
- 2 cloves garlic, minced
- 1/2 onion, diced
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon freshly grated ginger
- 1 tablespoon Sriracha
- 2 green onions, thinly sliced
- Salt and ground black pepper
- Everything But the Bagel Seasoning
Instructions:
- Dice onion, mince garlic, grate ginger, and slice the green onions.
- Heat olive oil in a saucepan over medium high heat. Add ground chicken and cook until browned, about 3-5 minutes. Drain any excess oil before placing back into the saucepan.
- Stir in onion, garlic, soy sauce, ginger, rice wine vinegar, hoisin sauce, and Sriracha. Cook for about 2-3 minutes
- Add the green onions and cook for another 1-2 minutes. Season with salt and pepper, to taste.
- Spoon chicken mixture into the romaine lettuce leaf and top with Everything But the Bagel seasoning. Add Sriracha and enjoy!
