Paul and I make chicken gyros pretty frequently so I was excited to mix things up and make these Mediterranean bowls. We’ve actually never made meatballs before, so it was a fun change. Plus, they turned out delicious. In addition to the meatballs, we had romaine, onion, cucumber, and rice. Everything topped with Tzatziki sauce and Sriracha was so good. I will say, this recipe calls for quite a few ingreidents, but it’s actually pretty inexpensive to make and you can repeat the recipe the following week with leftover Tzatziki, bread crumbs, eggs, and rice!
Chicken Meatball Ingredients:
- 1 lb. lean ground chicken
- 1/4 cup of bread crumbs
- 1/4 cup white, grated
- 2 cloves garlic, minced
- Zest of 1 lemon
- 3 tablespoons fresh parsley, finely chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon cumin
- Salt & pepper – seasoned to your likely
- 1 large egg
- 1/4 cup of feta cheese
Other:
- Romaine, chopped
- 1 red onion, thinly sliced
- 1 cucumber, sliced
- White or brown rice
- Tzatziki sauce – I bough pre-made sauce, but you can also make your own
- Sriracha
- Crused red pepper
Instructions:
- Preheat oven to 400F
- Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
- Cook the rice according to the instructions on the bag
- In a large bowl, combine all of the chicken meatball ingredients. Mix until well-combined.
- Form the chicken mixture into approximately 1 tablespoon sized balls. Place the balls onto your prepared baking sheet and bake in the oven at 400F for approximately 15 minutes until golden brown. Our meatballs were quite large, so it was closer to 17 minutes plus a final 1-2 minutes on broil.
- While the meatballs are baking, prepare the rest of the ingredients (chop the romaine, slice the red onion and cucumber)
- Assemble your Med bowls with rice, romaine, red onion, cucumber, meatballs, Tzatziki sauce, Sriracha (optional), and crushed red pepper
- Enjoy!
