Oh hey 👋 I am back after two months of zero blog posts! And what is a better way to come back than with a recipe? I have had pictures of this enchilada skillet saved on my phone for about a month and a half as a reminder to post it to the blog… better late than never.
Make this enchilada skillet once and it will for sure become a staple in your house. Not only is it quick to make, but it is relatively healthy (depending on how much cheese you throw in there). I love making this during the work week, because from start to finish it only takes about 25 minutes.
Ingredients: for two
- 1/2 lb ground turkey
- 3 small flour tortillas cut into 1 inch slices
- 1/2 can of black beans, rinsed (you can add more beans as desired)
- 1 8 oz can red enchilada sauce
- 1 4 oz can diced green chilis
- 1/2 red bell pepper, chopped
- 1/2 white onion, chopped
- 1/2 cup shredded cheddar cheese
- Olive oil
- 1 tsp cayenne pepper
- 1 tsp garlic salt
- 1 tsp chili powder
- Pepper to taste
- Optional toppings: sliced green onion, sliced avocado, and hot sauce
Instructions:
- Heat olive olive in a cast iron skillet. Once warm, add ground turkey, cayenne pepper, garlic salt, chili powder and pepper. Cook ground turkey until no longer pink, breaking into crumbles. Remove from heat and set aside.
- Add bell pepper and onion and cook for 2-3 minutes. Add in beans, diced chiles, enchilada sauce, and cooked ground turkey back to skillet. Cover and bring to a a boil.
- Reduce heat to a simmer and mix in sliced tortillas. Add shredded cheese and continue to heat on low until cheese melts.
- Scoop into bowls top with green onions, avocado and hot sauce!
